Christmas Cooking: Eggnog Pancakes & Honey Almond Cake

Eggnog pancakes are so fluffy and thick! I love them and they’re super easy to make. Kandy from Main Street Honey Shoppe sent me her recipe for Honey Almond Cake, which me and Selma made. These are both comfort foods for this time of year in my opinion. Eggnog pancakes are more of a Christmas item, and honey cakes are apparently eaten during Jewish New Year!

Eggnog Pancakes

panocekeLast year, this tradition started and today it begins again. I go to Brad and Oriana’s humble home and we make these pancakes and pair it with a television show marathon or a movie. Last year, I came over almost everyday and watched all of Game of Thrones. Today will be a bad movie day.

Ingredients:

1 1/2 cups all-purpose flour
1 tablespoon sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup eggnog
2 tablespoons butter or margarine if you are cheap like me
1 egg, lightly beaten

Directions

In a bowl, mix the flour, sugar, baking powder, and salt. Make a well in the center, and pour in the eggnog, butter, and egg. Mix until dry ingredients are evenly moist.

Pour 1/4 cup batter onto the hot griddle for each pancake. Cook pancakes until bubbly on top. Flip with a spatula, and continue cooking until lightly browned on bottom.

Here are our general steps and the product making it at home!

We beat our eggs, vanilla and almond extract together.IMG_7011
Selma proceeded to cream the butter and then blend in the dry ingredients together.IMG_7012

I made the glaze, which is mostly honey, brown sugar and a few other liquids. It got a bit cloudy so don’t overcook the glaze like I did! It still worked out fine in the end if you do.IMG_7020

And then we dressed it! It was so good. It’s surprisingly not as sweet as it looks. The almonds make it more hearty and the dough is light and almost flaky. It smells more like fresh, sweet pancakes than cake.

Thank you so much Kandy for this wonderful recipe! Selma gave most of her pieces to her family and she says she will probably make this again. For anyone who doesn’t know Selma very well, she makes lots and lots of cakes for her friends and family.

Also, just a shout out to the Main Street Honey Shoppe, they are so nice, helpful and welcoming. We will be definitely back in the New Year to try their baked goods and buy more honey.

We ate our dessert first and then Selma and I went to the Flying Pig for dinner! More on that later.
